I say this every year, but how is it possible that Christmas is next week already? I love this time of year, but it always seems to go so quickly. This year has been no exception. Between work, school parties, endless errands, decorating, dance performances, gymnastics, parades, Christmas events… whew… there is something almost every day it seems!
I realized this week it’s been over 2 weeks since I’ve given an update on my journey. I’m gonna blame it on the holidays because somehow I haven’t posted since I updated you about how Thanksgiving went!
I am pleased to say my journey is going great! I’m feeling good and it’s all gotten quite a bit easier lately. It’s feeling more natural and more like a lifestyle change which is a welcomed feeling! Nothing is worse that feeling like you’re depriving yourself of something and honestly, many days in the beginning did feel like that.
Welcome Back, Coffee!
Two weeks ago at my appointment, I asked again about coffee. I missed it so much. It wasn’t just the about the caffeine. After a little over a week without any coffee, my withdraws and headaches actually went away and I was feeling ok. I missed the experience though. It was part of my morning and I really, really missed it. I was so excited when they agreed to let me have one cup of coffee a day again, if I promised not to add any sugar. This wasn’t a problem as I’ve never enjoyed sweetened coffee anyway. I will never forget how good that first cup tasted after not having it for so long!
Some Exciting Changes I’m Experiencing
I’ve been on this journey now for 6 weeks and I’m feeling such a change, inside and out! All of my digestion issues I used to experience are completely gone – 100%. I can tell my glucose levels have evened out because I don’t get that “I gotta eat NOW” shaky feeling. I get hungry when it’s time to eat, but it’s not an urgency like it used to be. I’m also so satisfied after I eat. Even if it’s just a small snack of nuts or veggies dipped in hummus, I feel satisfied. I don’t find that I’m hungry a few minutes later like I used to be. The snack sustains me until my next meal, just as it should.
I gotta admit… what I am most excited about is that my clothes are too big! I feel it mostly in my pants. I’ve had to buy a couple pairs already in the next size down because I cannot keep them up! My family keeps joking with me that I need to invest in some belts, but instead, I think I’m going to just enjoy buying some cheap, smaller sized jeans as I need them! I also love the fact that my tighter fitting shirts feel so much better now, especially around the tummy area (my problem area). It’s like a whole new shirt!
The strangest change I’ve seen is that I’ve gone down a SHOE SIZE! Maybe it’s the colder weather. It’s definitely has to do with how much my body’s inflammation has done down. All of the sudden though, my shoes are too big! It’s the weirdest thing. I can’t buy all new shoes, but I have been enjoying spoiling myself with a few new pairs of boots this Winter, in a new size!
My Favorite Foods
It’s been fun to try to come up with good food choices, but also keeping the variety going. I do get a bit bored with the food I’m eating, but that just forces me to try to change it up a bit. My meal plans that I’m given each week are more of a guideline now. I’ve been encouraged to go ahead and switch out the veggies and proteins to make an entirely different meal.
For breakfast, I enjoy a protein smoothie most mornings when I’m running out the door. I really love MRM Veggie Protein PowderÂ in each of my smoothies. On weekends, I like to make a hot breakfast of eggs with salsa & cilantro or eggs over veggies. Sometimes I scramble the eggs, or sometimes I do them over easy. Whatever veggies I have on hand go in the pan, sauteed in coconut oil and then I always have a 1/2 of an avocado on the side.
Lunch is typically leftovers from the night before, a salad with chicken or salmon (dressed in olive oil, garlic, ginger, lemon, salt & pepper), or grilled chicken or salmon sauteed veggies. All of these meals can be prepped ahead of time and brought with me if I’ll be away from home, but most days I just come home during lunch for and make it fresh.
Dinners are my favorite. I love cooking so I’m really enjoying learning to cook in an even healthier way. I cook a lot of the same things I always have, but just leave out any grains from my plate. Some of our favorite meals have been:
- Beef or Chicken Tacos or Nachos (I just put my over greens, while my family uses tortillas or tortilla chips)
- Chicken Ginger Soup (and other soups) – Soups have been so great, especially during our chilly weather. They’re easy to pack full of veggies and meats and then I usually just make a side of gluten-free pasta that my family can add if they’d like
- Thai Turkey Lettuce Wraps (the kids like brown rice with theirs too)
- Chicken Curry
- Stir Frys
- Burgers (I just eat mine in a lettuce wrap)
As of this past Tuesday, I have lost a total of 22 lbs since the beginning of October! It’s hard to believe! I’ve lost weight before, but I’ve never had weight loss be as consistent as it’s been this time. Each time before, I’d loose a couple pounds one week and the next nothing. This time, it’s been about 2 lbs every week. What I’m doing is working and I’m not about to stop! When I started going to the nutritionist in November, they measured me and this past week, I was re-measured for the first time. Between my chest, abdomen, and hips, I’ve lost 11 inches! How crazy is that?!
As we go into this New Year, my hope is that my journey might inspire someone to take charge of their health too. Maybe you! It’s hard… it takes willpower, but it is worth it! I’ve spent so many years unhappy with how I looked and felt and I might always struggle with my self-esteem because of it. But I see glimpse of hope that all of those negative thoughts I’ve had of myself for some many years will slowly fall away along with the pounds. I hope this encourages you too.
